Broccoli & feta frittata is good for any meal!
Preheat oven to 350°
Whisk in a bowl & set aside:
1 doz. eggs,
½ cup milk
1/4 teas. salt
Heat in cast iron skillet and cook 9 min.: 1 tbsp. olive oil, add 12 oz. broccoli florets, pinch red pepper, ¼ teas. Salt. Add 3 tbsp. water, ½ tsp. lemon juice cook 1 min.
Add the egg mixture and 4 oz feta cheese crumbled. Stir and cook 1 min.
Transfer the skillet to oven and bake 20 min. until puffy. Enjoy!
