“Sugar” Cookies (With No Sugar!)
2 cups almond flour
1/3 cup Truvia (or Pyure or Swerve)
1 tsp baking powder
½ tsp xanthum gum
¼ cup melted butter (Kerry Gold butter is the healthiest)
1 large egg (cage free organic is the best)
1 tsp vanilla
Mix wet ingredients in bowl together. Add dry ingredients and mix together thoroughly.
Take 1 inch balls in dough and form the dough into disc-like cookies. Cookies will not bake down, so forming the cookie beforehand is very important. Bake in 350 degree oven for 15 minutes or until golden brown.
Sugar-Free Vanilla Buttercream Frosting
Prep time: 5 mins
This tastes like regular frosting, you will be shocked!!!! So will those you give it to, they will not know the difference. Make these for a party!
Ingredients
1/2 cup butter, room temperature
1 1/4 cup Confectioners Swerve (I used Pyrue which you can get at Walmart—it’s just like Truvia—because I like that grittier sugar texture instead of smooth but if you want smooth then use either one of the first 2 ingredients)
1 teaspoon vanilla extract
1 oz of softened cream cheese (optional)
1 tablespoon milk as needed (I didn’t use any)
Instructions
1. Add all ingredients into a stand mixer and blend on high until smooth.
2. Only add the milk if you are frosting a cake and need the frosting to be smoother. Continue to add an additional tablespoon of milk for desired consistency. Makes 1 1/4 cup or 10 ounces.
3. Does not need refrigeration once on cookies.
4. Unused frosting can be stored in an airtight container for up to 2 weeks or frozen for up to 3 months.
