Yucca Pizza Delight
The tuberous root of the yucca plant shown here is 10 inches long!
1. Peel the tough skin off and cut in chunks, then boil until soft (about 10 min).
2. Place soft yucca in a blender and add 1 egg and ¼ cup almond coffee creamer.
3. Chop your favorite veggies (broccoli, onion, and green and jalepeno peppers).
4. Add herbs, basil, parsley, cilantro, curry, garlic, crushed pepper, and Himalayan salt to chopped veggie mix.
5. Spray olive oil into a frying pan, pour the blended yucca mixture into the pan, and cook on low 15 min. with lid on.
6. Place the veggie/herb mixture on top of the yucca pancake, spray with olive oil, flip it over, and cook 5 min.
7. Flip it back and add feta cheese on top of veggies and then put the lid on the pan so the cheese will melt.
This made enough for two yucca pizzas. Mark and I split one and shared the other with our condo neighbors at St. Pete Beach during our holiday in June. Enjoy! It’s all good for you!
